Pita Bread
There are a lot of recipes out there for pita bread but I like this one best of all I have tried.
Pita Bread
1 1/8 cups warm water (110 degrees F/45 degrees C, any warmer will start to kill the yeast)
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons vegetable oil
1 1/2 teaspoons honey or white sugar
1 1/2 teaspoons active dry yeast
1 You can add these ingredients to your bread machine and mix on the dough setting or use your mixer as follows. Place water, honey, and yeast in your mixer bowl and let sit until the yeast re-hydrates. (The honey or sugar is to feed the yeast and get it ready to do it’s thing.)
2 Add oil and salt and with the dough hook on your mixer gently stir into the yeast mixture. (The oil is unnecessary however I would never go without it. It make sure the pita will have a flexibility and softness you will never get without it.)
3 Add half the flour and mix adding more flour a 14 cup at a time until the dough just pulls from the sides and clumps on the dough hook. (this is something to practice, too much flour will just make your bread more dense and crumbly, too little and it is hard to work with)
4 Once the dough is mixed it is time to let it sit in a greased bowl covered with a cloth for 25 to 30 minutes or until it doubles in size.
5 Punch and kneed the dough to redistribute the gluten and yeast then roll into a rope about 12 inches long. Now divide the dough into 8-16 pieces: 8 for double size pitas and 16 for small pitas.
6 Now roll the dough into circles about 1/4 inch thick. You may have to let the dough rest in between rolling so that the gluten can relax. By the time you get to the last pita you will be a pro.
7 Get your oven ready at 500 degrees (as hot as it can get!) and on a pizza stone(best) or on the back of a sheet pan with trusty hand protection bake your pitas 2-3 at a time.
8 Keep a close eye on the pocket pitas in the oven and as soon as you see them puff up count to 10 then flip them over and count to 10 again then pull them out onto a towel and cover with another towel. This will give you excellent pocket bread with the flexibility you need to stuff full of yummy stuff.
