Whole Wheat Pancake Mix



Hello there friends! In anticipation of the Make-a-Mix class I'm teaching this month, I figured I would share with you another of our tried and true Family Favorites: Whole Wheat Pancakes. We like 'em hearty and this is a super easy and quick recipe.

This recipe is not included in the Mixing It Up With Grains book. This is our family's favorite recipe for pancakes which I converted into a mix to make it even easier. I'll give you 2 versions: the first being the super duper healthy way I usually make it and the super healthy way my hubby does. ;o) I actually give credit to him for the original non-mix recipe, he came up with it himself! So here we go . . .


Whole Wheat Pancake Mix
(makes 4 batches)

(the Britney way: 145 cal/serving)
4 c. regular rolled oats
6 c. whole wheat flour
2 tsp. salt
1/2 c. sugar
5 Tbsp. + 1 tsp. baking powder
1 1/2 c. non-instant powdered milk
2 Tbsp. + 2 tsp. cornstarch

(the Kevin way: 151 cal/serving)
4 c. regular rolled oats
4 c. whole wheat flour
2 c. all-purpose flour
2 tsp. salt
1/2-3/4 c. sugar
5 Tbsp. + 1 tsp. baking powder
1 1/2 c. non-instant powdered milk
2 Tbsp. + 2 tsp. cornstarch

Stir and mix well. Combine 2 1/2 c. mix with 2 1/4 c. water. (We always add 1/2 c. or so of berries or chopped nuts as well.) Get your griddle on and start cookin' those pancakes! This recipe makes 8 servings (2 pancakes/serving) per batch using my full-size 1/3 c. scoop. They freeze really well so we usually only eat a half batch and save the rest for later. Top with your favorite syrup and enjoy!

PS-This is a great base recipe to add onto as you like! I LOVE adding pumpkin puree with a little cinnamon and nutmeg in the fall, yummy!
